Medicated Turmeric Quinoa Bowl

Yields4 Servings

 4 tbsp Medicated Coconut Oil
 2 cups Organic Vegetable Broth
 ¼ cup quinoa
 2 cups Black Beans (Washed & Rinsed)
 ½ Red Onion
 2 Tomatoes
 1 White Onion
 3 tsp Turmeric Powder
 1 tsp Paprika
 1 tsp Cumin
 1 avocado
 1 lime
 1 Cilantro (small bunch)

In a medium sauce pan, add quinoa, vegetable broth, and chopped tomatoes. Bring quinoa to a boil, then cover and lower to a simmer for ~15 minutes or until light and fluffy (timing dependent on packaged instructions)

Chop onions and sauté in a separate pan in medicated coconut oil. Add all the herbs with salt and pepper. Rinse black beans and add to mixutre

Stir all ingredients together in one bowl. Top with lime, cilantro and avocado.
